Ingredients:

• 1 cup of green peas

• 1 onion, chopped

• 2 tablespoons of olive oil

• 4 cups of vegetable broth

• Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until they are softened.
  2. Add the green peas and vegetable broth. Bring to a boil and simmer for 10 minutes. Season with salt and pepper to taste. Serve hot with some delicious croutons on top!

Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, stirring occasionally, about 5 minutes. Add the broth and tomatoes with their juice and bring to a simmer. Add the peas and cook until tender, About 5 minutes. In a small bowl whisk together the flour and plant-based milk until smooth. Stir into the soup and continue cooking until thickened, about 5 minutes more. Season with salt and black pepper to taste. Serve warm with desired toppings.
